Burnt Onion and Aubergine Dip
I get many requests for this decidedly brown dip of silky savouriness, the first recipe in my chapter A Loving Defence of Brown Food in Cook, Eat, Repeat, so creamy that you would never guess it’s actually dairy-free and, indeed, vegan. True, anyone in the habit of changing nappies regularly might not find it the most appetising of sights, but one taste of it — full of rich, deep smokiness — and even those not immediately attracted come back for more. I’ve called it a dip, but actually it lends itself as well to a spread on toast or a sauce for pasta; in this latter case, you’ll need to mix in some of the starchy pasta water when you toss the pasta with it, and I like to add some chilli flakes and a little extra squeeze of lemon, too. But as a dip, it is luscious, and if I have a lot of people round, I serve the Beetroot and Chickpea Dip and the Coriander and Jalapeño Salsa alongside; the pink, green and muted ochre like tonally-tinkered-with traffic lights on the table. But it’s a sensational solo act, so there is no need to add anything alongside save for some tortilla chips (if you can get blue corn ones, I urge you to) or whatever else you want to dip into it. If you don't have a baking tray large enough for all the aubergines and onions and need to use two, then be prepared for the cooking time to be longer, and swap the trays around in the oven after about 40 minutes. And if at all possible, I recommend using 3 aubergines as stipulated below, rather than say 2 that come to the same total weight. Obviously, if that choice isn't open to you, it does work with 2, but you will need to cut them into long quarters.

Tiramisini
Some say, challenging more generally accepted ideas about the provenance, that tiramisu was invented in a casa chiusa (a house of ill repute) to give the working girls a pick-me-up, as the name (tira-mi-su) suggests. Whatever its inception, this one reverts to the original formulation - although in dinkier format. This is not because I am a huge fan of the cute — you know that — but because it means you have a tiramisu worth making for fewer people (you don't need a partyful), and in less time. By which I mean very much less time, since, unlike the big, trifle-style tiramisu, these tiramisini — think coffee-soaked Savoiardi sponge fingers, topped with the familiar, whipped Marsala-spiked mascarpone in small-portioned martini glasses — don't even need to sit overnight before being ready to eat. How to Meal Prep Chicken...if you hate meal prepping.
Lamb Biriyani | Based Cooking
This recipe makes an Southern Indian (Tamil) style Lamb biriyani that has been adapted to a more western audience (aka a bit less spicy) and can be made with either Lamb or Mutton. Best served with a sauce such as an onion raitha. A plated rendering of the dish, made with Mutton. Makes a really hearty ,meaty and delicious dish. The dishes uses a rice to meat ratio of 2:3. PS: the biriyani tastes better the longer it’s allowed to soak in it’s flavour after cooking.
Mutter paneer
Mutter paneer is a traditional north Indian curry. The texture of fresh peas stands up well against the paneer, but frozen is fine too. This can be ready in just 30 minutes, and you won't feel like you're missing out, even though it's veggie. Serve it as a side curry with some naan or rice.

Linguine With Mushrooms, Lemon, Garlic and Thyme
This is one of my proudest creations and, I suppose, a good example of a recipe that isn't originally from Italy, but sits uncontroversially in her culinary canon. I don't think it would be too presumptuous to name this linguine ai funghi crudi. It is about as speedy as you can imagine: you do no more to the mushrooms than slice them, steep them in oil, garlic, lemon and thyme and toss them into the hot cooked pasta. Pasta Risotto With Peas and Pancetta
Here, I cook pasta much as I would if I were making a traditional risotto. But there is a difference — that you don't have to stir constantly and that the pasta takes only 10 minutes to cook are obvious benefits to the harried midweek cook. I love the rice-shaped pasta that is orzo — it oozes its starchiness out into the sauce and — what's more — you need only the one pan. I advise that the pan be heavy-based: a small enamelled cast-iron casserole would be perfect although often as not I use a thick-bottomed saucepan. Please note that the amount of water specified is a starting point only: you may need to add more if the pasta's absorbed all the water before it's cooked.

Chicken Schnitzel With Bacon and White Wine
This is one of those fast and easy suppers that makes you — and whoever else is eating it — purr with delight. You don't have to use garlic infused oil, but minced garlic is likely to burn. What I'd suggest as an alternative, then, is that you cook a peeled garlic clove in oil, removing it once it's golden on both sides, and then proceed with the bacon.

Life-changing vindaloo recipe. I made this with pork, but the masala would be great with the meat or veggie protein of your choice.
