Some say, challenging more generally accepted ideas about the provenance, that tiramisu was invented in a casa chiusa (a house of ill repute) to give the working girls a pick-me-up, as the name (tira-mi-su) suggests. Whatever its inception, this one reverts to the original formulation - although in dinkier format. This is not because I am a huge fan of the cute — you know that — but because it means you have a tiramisu worth making for fewer people (you don't need a partyful), and in less time. By which I mean very much less time, since, unlike the big, trifle-style tiramisu, these tiramisini — think coffee-soaked Savoiardi sponge fingers, topped with the familiar, whipped Marsala-spiked mascarpone in small-portioned martini glasses — don't even need to sit overnight before being ready to eat. And please read the Additional Information section at the end of the recipe before proceeding.

Stina Pošip Jako Vino 2023
The Stina Pošip Jako Vino is a superb example of Dalmatia’s renowned indigenous white grape variety, Pošip. The beautiful Croatian island of Brač is famous for its white stone, which is known locally as Stina and was the inspiration behind the name of this stunning collection of Jako Vino wines. The grapes were cooled prior to vinification and protected from oxygenation throughout. Two thirds of the grapes were gently pressed; the remaining third was left to macerate on the skins for six hours. 80% of the fermentation took place with selected yeasts in stainless steel tanks at controlled temperatures; 20% took place in wooden vats, imparting subtle oak complexity to the wine. The wine was then aged in stainless steel tanks for six months. Intense citrus, passionfruit and peach flavours are lifted by a refreshing minerality, creating an exotic, elegant style with a textured palate and a persistent finish. Intriguingly packaged with an understated label. [#intro]A superb example of Dalmatia's renowned indigenous Pošip grape, intriguingly packaged with an understated label...[/intro]

Pea, Mint and Avocado Salad
In How to Eat I wrote about my Great Aunt Myra’s Pea, Mint and Avocado Salad, which we all considered rather fabulously exotic when she came up with it in the Seventies. I’ve tinkered with it over the many years since, and this – give or take – is the version I make now, and I make it often. When I say “give or take”, it’s simply because I don’t always use the same mix of salad leaves (though I do like it to include a few curling pea shoots if possible) and don’t expect you to either; I’ve given rough amounts in the recipe so you have an idea of how much is needed, but even then, you can freestyle as wished. While there’s nothing to stop you adding some cold chicken, prawns, feta or goat’s cheese to turn it into a main meal, I generally serve it as a side salad, though when I wrote about it all those years ago, it was, indeed, as a starter. I’ve utterly given up on starters since then. By the way, I find it very much easier to get the peas-a-steeping in the dressing in advance and then add the leaves and avocado at the last minute. I should add that the beauteous salad in this picture is actually still waiting for a final toss with the last bit of dressing in the mixing bowl: I didn’t want the leaves to wilt while it waited for its close-up!

Life-changing vindaloo recipe. I made this with pork, but the masala would be great with the meat or veggie protein of your choice.
