Along with chocolate, there is much comfort to be gleaned from reading cookbooks. This recipe combines two loves by being chocolatey to the point of madness and having revealed itself to me after a cosy, snuggled-down read of Elinor Klivans' glorious Big Fat Cookies. What I do is make up the full batch of these (hard to divide it really, since it contains only 1 egg) and form all 12 cookies, but bake only half and freeze the other half. I freeze them on a little tray and, once they're hard, I bung them in a freezer bag, seal it and stash it back in the freeze, to bake them unthawed at a later date. That way, I've got 6 chocolate cookies to keep me and my family happy without any time or effort. This is what I call an investment. And it's worth it — these are the chocolatiest cookies you will ever come across.

The cult of the cookie clicker: When is a game not a game?
There's a growing obsession online with cookies, imaginary chocolate chip cookies.

Ginger and Walnut Carrot Cake
This is very different from the richly sweet, loftily layered and aerated American original. While it is in some senses far more reminiscent of an old-fashioned, slightly rustic English teatime treat, it is, with its ginger-spiked cream cheese icing — only on top, not running through the middle as well — just right to bring to the table, in pudding guise, at the end of dinner, too. Before you chop the amber dice of crystallised ginger, rub the cubes between your fingers to remove excess sugar. Then chop them finely, though not obsessively so: you want small nuggets, not a jammy clump. And, for what it’s worth, I find it easier to crumble up the walnuts with my fingers, rather than chopping them on a board.

Pumpkin Cranberry Muffins
These pumpkin cranberry muffins are so good that I’ll sometimes double the batch just to stretch them a little further. Bonus: They freeze beautifully!

Apple and Almond Cake
It's astonishing how buttery this cake tastes, given that there is not a gram of butter in it. The flour is replaced with ground almonds — and cooked, cooled, pureed fruit provides moistness and flavour. If you want a smaller cake, simply halve the ingredients and use a 20cm/ 8 inch tin. I don't find it takes appreciably less time to bake.
